Chicken Sausage Power Bowls
Ingredients:
- 1 head broccoli or broccolini, cut into florets
- 1 red bell pepper, cut into 1-inch dice
- 1 red onion, cut into 1-inch dice
- 1 large sweet potato, chopped in 1 inch cubes
- 1 zucchini, sliced in half moons
- 4 organic chicken sausages, sliced
- 3 tablespoons extra virgin olive oil
- 1 heaping teaspoon each garlic powder, smoked paprika, Italian seasoning
- 1/2 teaspoon kosher salt and fresh cracked pepper
- Optional: Rice, feta, balsamic glaze
Instructions:
- Preheat oven to 425.
- Mix everything together and toss well.
- Spread out between two pans, don't overcrowd one pan.
- Roast for 25 mins, stirring often.
- Broil for 2-3 mins to crisp up.
