Sweet Potato Breakfast Bowls
Ingredients:
- 4 medium sweet potatoes
- Coconut oil
- 6 slices bacon
- 1 red bell pepper
- Scallions
- Slap yo mama
- 8 eggs
Instructions:
- Preheat oven to 400. Scrub potatoes and coat with coconut oil and salt. Poke holes with fork.
- Bake potatoes for 1 hour. Cook bacon in the mean time and reserve 2 tbsp of fat.
- Cook bell peppers in the fat.
- Cut potatoes in half. Mash insides with fork and remove and put in bowl. Stir in ghee or coconut oil, bacon, bell peppers, and salt and pepper.
- Spoon mixture back into potato skins and leave a large groove for egg.
- Crack an egg into hole and bake once more for 15 mins.
